  1. HONEYED ROAST POTATOES

  2. (Serves 2)

  3. 2 medium potatoes, peeled

  4. 2 tblsp oil

  5. 60 g butter

  6. salt (opt)

  7. 1/4 cup honey (90g)

  8. Add potatoes to a pan of cold water, bring to the boil then drain

  9. immediately. Place potatoes in a baking dish and butter and sprinkle

  10. 180 C. (350 F.) for mins. Baste with honey and bake a further 20 minutes or until

  11. tender. Serve with any roast meat.

  12. Note:

  13. Sprinkling potatoes with a little salt gives a light, crunchy crust.

  14. But only small amounts of salt is necessary.
