  9. 1 2/3 cups Heavy cream

  10. 2 Unsalted butter -- sticks

  11. 16 ounces Semisweet chocolate -- cut in

  12. To small pieces 1 teaspoon Vanilla flavoring -- or to

  13. Taste Cocoa

  14. Bring cream and butter to a boil in medium saucepan.Remove from heat and add

  15. chocolate.Allow to sit for 5 minutes.Stir until smooth.Add vanilla.Let cool in

  16. refrigerator,and stir with whisk every 15 minutes or so until very thick.Chill

  17. until firm..

  18. Using melon baller or small spoon,scoop out tablespoon sized portions,and place on sheet sprinkled with cocoa.Place in refrigerator to harden.Using

  19. palms of hands,gently and quickly roll each portion of chocolate into a

  20. ball.Chill again to harden..

  21. Roll each truffle in powdered cocoa,finely chopped nuts,or dip into melted
