  2. PLATTSBURGH TOMATO BEEF SOUP

  6. 1 lb Ground beef

  7. 1 c Chopped onion

  8. 1/2 c Chopped celery

  9. 1 tb Butter or margarine

  10. 3 c Tomatoes

  11. 2 Beef bouillion cubes

  12. 1/3 c Reg. uncooked rice

  13. 1 t Salt

  14. 1/2 ts Chili powder

  15. 1 Bay leaf

  16. 3 1/2 c Water

  17. Saute beef, onion and celery in melted butter until

  18. meat is browned. Stir in remaining ingredients. Bring

  19. to a boil. Reduce heat, cover and simmer for 20

  20. minutes. Remove bay leaf. Makes 2 quarts of hearty

  21. soup. My copy, circa 1978 was given to me by Mrs.

  22. Denise Funnell, who had a copy of a Plattsburgh, NY

  23. newspaper. It was originally submitted in the paper by
