  2. CHUTNEY RICE

  6. 1 1/2 c Rice

  7. 2 tb Sugar -- up to

  8. 4 Tbsp

  9. 3 Cloves

  10. 2 lg Apples -- cooking chopped

  11. 4 tb Raisins -- or sultanas

  12. 2 tb Oil

  13. 3 c -Water

  14. 1/2 c Cashew nuts

  15. -salt & pepper

  16. To turn this recipe into a main dish add cooked

  17. chickpeas for vegetarians, cooked chicken or prawns

  18. for non vegetarians Taking first the sugar, vinegar

  19. and salt, gently stir them in a pan. Now add the

  20. cloves, apple and raisin. Next heat the mixture

  21. slowly, stirring more frequently, and cook it for about 30 minutes or until it thickens. Allow to cool a

  22. little. Meanwhile, gently heat oil in large saucepan.

  23. Add the rice and stir for about 1 minute, seasoning

  24. with salt and pepper. Then pour in the water, put the

  25. lid on, and bring to a boil. Now turn down the heat

  26. and simmer the rice for 20 minutes or until it is

  27. cooked as you like. When this done, turn the rice into a dish and spoon the chutney over it, scattering the
