  1. 1/2 cup Dijon mustard

  2. 2 tbsp. soy sauce

  3. 1 tbsp. sesame oil Pinch of ground ginger or a few gratings of fresh ginger

  4. 4 pitas (sourdough or onion flavor work well here)

  5. 1 deli-roasted chicken, sliced and cut into bite-size pieces

  6. 1-1/2 to 2 cups grated mozzarella or Monterey Jack cheese

  1. Preheat oven to 500 degrees. In a small bowl, whisk together the mustard, soy sauce, sesame oil and ginger until smooth. Divide this mixture among the pitas, then top with the chicken and the grated cheese. Bake the pizzas for 10 minutes or until browned and bubbling. Makes 4 servings.
