  1. 6 ear(s) corn , husked 25 cup(s) mayonnaise

  3. Ground chipotle , to taste 75 cup(s) grated manchego cheese

  1. Heat grill to medium. Grill corn, turning occasionally until all sides are charred and kernels are tender, 20 to 25 minutes.

  2. Meanwhile, in a small bowl, stir together mayonnaise and juice of half a lime. Remove corn from grill and spread with thin layer of mayonnaise mixture. Sprinkle each cob with a pinch of chipotle and 1/8 cup cheese. Serve immediately with lime wedges.
