  1. Cupcakes

  2. 4 eggs

  3. 1 cup white sugar

  4. 1 cup brown sugar

  5. 1 can pumpkin (15 oz., about 2 cups)

  6. 3/4 cup vegetable oil

  7. 3/4 cup olive oil

  8. 1 tablespoon vanilla extract

  9. 3 cups flour

  10. 2 tablespoons baking soda

  11. 2 tablespoons baking powder

  12. 1 tablespoon ground cinnamon or pumpkin pie spice

  13. 1 tablespoon salt

  14. 2 cups semi-sweet chocolate chips

  15. Cream Cheese Mixture

  16. 2 8 oz. packages cream cheese, softened

  17. 1/2 cup sugar

  18. 1 teaspoon vanilla extract

  19. 2 eggs

  1. In a mixing bowl, beat eggs, sugar, pumpkin and oils until smooth.

  2. Combine flour, baking soda, baking powder, cinnamon and salt. Add to pumpkin mixture and mix well. Fold in chips.

  3. Fill greased or paper-lined muffin cups three-fourths full.

  4. Bake at 400 F for 16 to 20 minutes or until cupcakes test done.

  5. Cool in pan 10 minutes before removing to a wire rack.
