  1. 2 cups fresh orange juice

  2. 1/2 cup mayonnaise

  3. 1/2 cup sour cream

  4. 2 teaspoons chopped fresh tarragon, or 3/4 teaspoon dried Salt, to taste

  1. Preparation: Place the orange juice in a small heavy saucepan over medium heat. Cook, swirling the pan, until the juice is reduced to a thick syrup, about 20 minutes. You should have about 3 tablespoons. Combine the orange syrup, mayonnaise , sour cream , tarragon , and salt in a bowl. Cover and refrigerate for at least 2 hours before use.
