  2. CARROT AND GINGER SOUP

  6. 1 Onion Chopped

  7. 1 tb Jargarine

  8. 1 1/2 lb Carrots Sliced

  9. 1 t Fresh Grated Ginger

  10. Black Pepper

  11. 4 1/2 c Light Vegetable Stock or Water

  12. 1 lb Peeled & Chopped Apples,

  13. 3 tb Sherry

  14. 1. Saute the Onion in Margarine Covered for 5 Min,

  15. Without Browning. Then add the Carrots & Ginger.

  16. Cover and Cook for a Further 10 Min. Stir from Time To

  17. Time.

  18. 2. add the Stock or Water and Bring To a Boil, Then

  19. Simmer Gently for 15 Min, until the Carrots Are

  20. Tender. Puree the Soup in a Foodprocesor, Then Sieve

  21. (Not Really Necessary).

  22. 3. Return the Soup To the Finsed Out Pan, Reheat

  23. Gently and Season To Taste With Pepper.

  24. (yOu May Use Parsnips Instead Of Carrots and add 1

  25. T. Curry Powder To the Onions When You Saute Them. a

  26. Swirl Of Yogurt on Top Is Good and add Some Crisp
