  1. 8 ounces sharp cheddar cheese

  2. 8 ounces cream cheese, softened One-third cup mayonnaise

  3. 1 garlic clove, minced

  4. 1 (8-ounce) jar pimentos, diced One-half teaspoon black pepper One-half teaspoon hot sauce

  1. Combine the cheddar and the cream cheese in mixing bowl, and cream with an electric mixer until light and fluffy. Add the remaining ingredients. Mix well. Cover and chill overnight. Best served at room temperature. Use as sandwich spread or serve with crackers. Makes about 4 cups
