  2. 4 cups 948ml Shredded spinach

  3. 2 cups 474ml Washed and torn romaine lettuce

  4. 8 Thin slices red onion

  5. 2 tablespoons 30ml Crumbled blue cheese - (1/2 oz)

  6. 1 tablespoon 15ml Grapefruit - peeled, sectioned (large)

  7. 1/2 cup 118ml Frozen citrus blend concentrate - thawed

  8. 1/4 cup 59ml Prepared fat-free Italian salad dressing

  1. Recipe Instructions Cut chicken into 2- by 1/2-inch strips. Spray large nonstick skillet with cooking spray; heat over medium heat until hot. Add chicken; cook and stir 5 minutes or until no longer pink in center. Remove from skillet. Divide spinach, lettuce, onion, cheese, grapefruit and chicken among 4 salad plates. Combine citrus blend concentrate and Italian dressing in small bowl; drizzle over salads. Garnish with assorted greens, if desired. This recipe yields 4 servings.
