  2. RHUBARB-PECAN MUFFINS

  7. 2 cups Flour

  8. 3/4 cup Sugar

  9. 1 1/2 teaspoons Baking powder

  10. 1/2 teaspoon Baking soda

  11. 1 teaspoon Salt

  12. 1/2 cup Chopped pecans

  13. 4 tablespoons Just Whites

  14. 1/4 cup warm water

  15. 1/4 cup Lighter Bake

  16. 1/4 cup Orange juice

  17. 1 1/4 cups Rhubarb -- finely chopped

  18. Combine all dry ingredients. Follow directions to mix Just Whites,

  19. add lighter bake and orange juice. Add liquid to dry ingredients,

  20. mix. Add rhubarb. Lightly spray muffin cups with vegetable spray or 350F for 25-30 min.

  21. 1 egg or 2 egg whites can be used instead of Just Whites.

  22. cup oil can be used instead of Lighter Bake.
