  1. 1 1/2 lbs basmati rice or 28 oz in measuring cup

  4. 10 cardamon pods

  5. 10 bay leaves

  6. 3 in cinnamon stick

  7. 2 star anise

  8. 3 oz walnut s

  9. 3 oz raisons

  10. 3 oz cashew s

  1. Wash rice to remove starch then soak for 45 minutes. Heat ghee in large pan and then add in this order, cloves, cardamon pods, bay leaves, cinnamon, anise and fry for one minute. then add nuts and raisons and stir till raisons puff up. Now add drained rice and stir till all grain coated. Add 40 oz 2 pints) water, salt to taste bring to boil then cover with foil shiny side down and lid and simmer very gently for 20 minutes.
