  1. Sea salt

  2. 3/4; tsp store-bought or homemade garam masala, recipe follows

  3. 1/2; tsp ground cumin

  4. Freshly ground black pepper

  5. 900 g sweet potatoes, peeled and cut into 1 cm slices, then again into 1 cm sticks

  6. Olive oil

  7. 3 large cinnamon sticks (if you have the kind you get at Indian stores, it's about 3 tbsps cinnamon bark bits)

  8. 3 tbsps whole cloves

  9. 60 g green cardamom pods, shelled, husks discarded (about 2 tbsps of seeds)

  10. 4 large black cardamom pods, shelled, husks discarded (about 1 tbsp of seeds)

  1. Sweet potato fries For the sweet potato fries:

  2. 1) Preheat the oven to 230 degrees C.

  3. In a small bowl, toss together 1 rounded tsp of salt, garam masala, cumin and some freshly ground black pepper to taste.

  4. Add the sweet potatoes to a large bowl, drizzle with enough olive oil to coat, and sprinkle with the spice rub. Toss well to coat evenly.

  5. Pour the sweet potatoes out onto a parchment paper-lined baking sheet or a baking rack, making sure all the pieces are evenly spaced. Bake 30 to 35 mins, flipping halfway through. Remove the potatoes from the baking sheet and serve immediately. For the garam masala:

  6. 1) Combine the cinnamon sticks, cloves, green cardamom seeds, black cardamom seeds, if using, in a spice grinder or coffee grinder and grind until fine. Store the spice mix in an airtight container away from direct sunlight.
