  1. Choc-orange almond cake

  2. 60g dark eating chocolate, chopped coarsely

  3. 1 teaspoon finely grated orange rind

  4. 2/3 cup (160ml) orange juice

  5. 90g butter, softened

  6. 1 cup (220g) firmly packed brown sugar

  7. 2 eggs

  8. 2/3 cup (100g) self-raising flour

  9. 2 tablespoons cocoa powder

  10. 1/3 cup (40g) almond meal

  12. cup (80g) icing sugar

  13. 400g white prepared fondant

  14. blue food colouring

  15. 1/3 cup (110g) orange marmalade, warmed, strained

  16. 2m ribbon, approximately

  1. Preheat oven to moderately slow (170C/150C fan-forced). Line 6-hole texas or 12-hole standard muffin pan with paper cases.

  2. Combine chocolate, rind and juice in small saucepan; stir over low heat until smooth.

  3. Beat butter, sugar and eggs in small bowl with electric mixer until light and fluffy.

  4. Stir in sifted flour and cocoa, almond meal and warm chocolate mixture. Divide mixture among cases; smooth surface.

  5. Bake large cakes about 35 minutes, small cakes about 25 minutes. Turn cakes onto wire rack to cool.

  6. Dust surface with sifted icing sugar, knead fondant until smooth. Knead blue colouring into fondant.

  7. Brush tops of cakes with marmalade. Roll fondant out to 5mm thickness; cut rounds large enough to cover tops of cakes.

  8. Place rounds on cakes; tie cakes with ribbon.
