  2. ARTICHOKES WITH HERBS

  6. 2 lg Artichokes (or 4 medium)

  7. 1 sm Carrot

  8. 1 sm Onion

  9. 1 tb Olive oil

  10. 2 tb Parsley -- chopped

  11. 1/2 ts Basil leaves, dried

  12. 1/2 ts Oregano

  13. 1/2 ts Dill weed

  14. 1 Garlic clove

  15. Salt

  16. 1 c Wine, dry white

  17. Pepper to taste

  18. With scissors or sharp knife, cut 1 1/2 inches off

  19. top of each artichoke; cut off stems. Pull leaves open

  20. at top; remove center leaves and scrape out choke with

  21. spoon. In blender or food processor, combine carrot,

  22. onion, parsley, dried herbs, garlic and salt and black

  23. pepper to taste; process until finely chopped. Stuff

  24. herb mixture between leaves of artichokes. Place

  25. 1/2 cup water in 4- or 6-qt

  26. pressure cooker. Place artichokes on rack; close cover

  27. securely. Place pressure regulator on vent pipe. Cook

  28. 20 minutes at

  29. 15 pounds pressure, with pressure

  30. regulator rocking slowly. Cool cooker at once. Remove

  31. artichokes and rack; keep warm. Boil liquid left in

  32. pressure cooker about 5 minutes or until reduced to

  33. 1/4 cup; stir in red pepper. To serve, spoon cookng

  34. liquid over artichokes.
