  1. 3/4 cup uncooked orzo pasta

  2. 1 lb boneless chicken breast , cut into 1-inch pieces

  3. 1 medium cucumber , chopped

  4. 1 small red onion , chopped

  5. 1/4 cup minced fresh parsley

  6. 2 tablespoons lemon juice

  7. 1 tablespoon olive oil

  8. 1 teaspoon salt

  9. 1/4 teaspoon pepper

  10. 1/4 cup crumbled reduced-fat feta cheese

  1. Cook pasta according to package directions.

  2. Meanwhile, in a large skillet coated with cooking spray, cook chicken over medium heat for 6-8 minutes or until no longer pink.

  3. In a large bowl, comine the cucumber, onion, parsley and chicken.

  4. Drain pasta; stir into chicken mixture.

  5. In a small bowl, whisk the lemon juice, oil, salt and pepper.

  6. Pour over chicken mixture; toss to coat.

  7. Serve warm or cold.

  8. Just before serving; sprinkle with the cheese. ?
