  1. 1/2 lb chopped bacon

  2. 3 cups yellow onion s, chopped salt & pepper cayenne pepper

  3. 1/2 cup packed brown sugar

  4. 2T minced shallot s

  5. 1T minced garlic

  6. 6 cups water

  7. 1/4 cup rice vinegar

  8. 6lbs assorted greens ( collard , kale, spinach etc)

  1. In large pot saute bacon until slightly crisp. Add onions and season with s&p and cayenne, to taste. Cook 6 to 7 minutes, until onions are wilted and golden. Add brown sugar and stir to dissolve. Add shallots and garlic. Cook for 2 minutes. Add water and vinegar and mix well. Begin adding the greens, a third at a time, pressing them down as they begin to wilt. Season with s&p. Reduce heat to medium-low and cook, uncovered, until the greens are soft, about 1 hour and 15 minutes.
