  1. 3 Garlic cloves - minced

  2. 2 tablespoons 30ml Corn oil

  3. 3 cups 187g / 6.6oz Diced canned tomatoes

  4. 3/4 cup 120g / 4 1/5oz Diced green beans

  5. 1/2 cup 73g / 2.6oz Chopped green bell peppers

  6. 5 Fresh corn kernels - cut off the cobs

  7. 1 Chicken broth

  8. 1 tablespoon 15ml Lemon juice

  9. 2 teaspoons 10ml Dried thyme

  10. 1 teaspoon 5ml Celery seed

  11. 1 teaspoon 5ml Cajun spice blend Salt - to taste Freshly-ground black pepper - to taste

  12. 2 Red pepper sauce

  13. 1/4 cup 4g / 0.1oz Coarsely-chopped fresh cilantro - for garnish

  1. Recipe Instructions In a large stock pot over low heat, saute the garlic in oil for 1 minute. Stir in all the vegetables and cook for 5 minutes. Turn up the heat, add the broth and bring to a boil. Add lemon juice and seasonings. Reduce heat and simmer gently, covered, for 30 minutes. Serve with chopped cilantro and tortilla chips. This recipe yields 4 servings.
