  1. 2 tablespoons butter

  2. 3 shallots, chopped

  3. 2 pound lobster meat, cut in bite-size pieces

  4. 1 1/4 cups whipping cream

  5. 1/2 cup white wine

  6. 1/3 cup fish stock or clam juice

  7. 1 tablespoon cornstarch

  8. 2 cups sliced bananas, sliced

  9. 2 limes, peeled and sections removed from membrane

  10. 1 whole serrano pepper, chopped Salt and pepper to taste

  1. In a large skillet over medium heat, melt butter. Add shallots, cook for 1 minute, add lobster meat, cook until it just begins to turn white, about 2 minutes.

  2. Meanwhile, in a medium bowl, combine cream, wine, fish stock and cornstarch; stir until no lumps remain. Add mixture to skillet, bring to a boil, stirring constantly. Add bananas, lime segments, serrano pepper, salt and pepper. Cook until lobster is cooked through, about 2 to 3 minutes.
