  8. 2 pounds boneless pork shoulder -- cubed

  9. 1 teaspoon salt

  10. 1/4 teaspoon ground ginger

  11. 1/8 teaspoon pepper

  12. 13 ounces canned pineapple chunks

  13. 1/4 cup firmly packed brown sugar

  14. 1 teaspoon chicken broth -- instant

  15. 1/4 cup molasses

  16. 1/4 cup vinegar

  17. 2 tablespoons cornstarch

  18. 16 ounces sweet potatoes -- or canned

  19. 2 tomatoes -- cut in

  20. 1 green pepper -- cut in

  21. 1 cubes

  22. Trim excess fat from meat. Place in crock pot and season with salt, ginger

  23. and pepper.

  24. Drain syrup from pineeapple and add water to make 1 1/2 cups. Reserve

  25. chunks. Add syrup to pork, stir in sugar, chicken broth, molasses and vinegar.

  26. 8 hours or high for 4 hours. Turn heat to high. Combine cornstarch and 1/4 cup cold water. Stir into pork mixture and blend well. Add cooked sweet potatoes, tomatoes, pineapple chunks and green peppers.

  27. Simmer 20 mins. until thickened and vegetables are heated through.
