  1. 2 pound(s) Idaho potatoes , peeled and cut into 3/4-inch pieces

  2. 1 cup(s) mayonnaise

  3. 2 tablespoon(s) white wine vinegar

  4. 1 1/2 teaspoon(s) coarse salt

  5. 1 teaspoon(s) sugar

  6. 1/4 teaspoon(s) fresh-ground black pepper

  7. 1 cup(s) celery , thinly sliced

  8. 1 cup(s) (chopped) yellow onion

  9. 2 (hard-boiled eggs) peeled and chopped

  1. Place the potatoes in a 4-quart stockpot and cover with water. Bring to a boil over high heat. Reduce heat and simmer until potatoes are tender and easily pierced with a fork -- about 10 minutes. Drain and cool slightly. Whisk the mayonnaise, vinegar, salt, sugar, and pepper together in a large mixing bowl. Add the potatoes, celery, onion, and eggs to the bowl and gently toss. Transfer to a serving dish and chill until ready to serve.
