  1. 2 hearts of romaine lettuce, cut in half lengthwise olive oil Kosher salt Freshly ground pepper

  2. 4 slices applewood-smoked bacon, cooked and crumbled FOR THE BLUE CHEESE DRESSING

  4. 1/2 cup sour cream

  5. 8 ounces crumbled blue cheese (or less, depending on taste)

  6. 1 tablespoon lemon juice

  7. 1 1/2 tablespoons grated shallot

  8. 2 cloves garlic, grated Kosher salt and fresh ground pepper, to taste

  1. For the Blue Cheese Dressing: Combine the dressing ingredients and refrigerate for at least three hours, (this lets the flavors develop.) Reserve covered in the refrigerator until ready to use. This recipe will make 2 cups and keep for 2 weeks in the refrigerator.
