  1. Ingredients 1 cup (250ml) shortening 1 cup (150ml) white sugar 1 egg, beaten 3 tbsp (45ml) ground almonds 3 tbsp (45ml) ground cashew nuts 1/2 tsp (2 1/2ml) vanilla extract 1/2 tsp (2 1/2ml) almond extract 2 1/2 cups (625ml) all-purpose flour 1 1/2 level tsp (7 1/2ml) baking powder pinch salt

  1. Method : Cream a shortening and sugar together in a bowl. Add vanilla, egg, almond extract, almonds and cashews. Sift flour, baking salt and powder and together. Now, knead lightly and fold into creamed mixture. Shape the dough into nicely walnut-sized balls. Arrange on a lightly greased baking sheets and then Press each ball with a fork to in order to flatten slightly. Bake at 400F (200C) until pale golden, 15-20 minutes.
