  1. 2 x fresh marron

  2. 1 teaspoon sea salt,

  3. 2 star anise

  4. 4 cardamom pods, ground

  5. pepper

  6. cucumber , finely sliced

  7. White onion , finely sliced

  8. fennel , finely sliced

  9. avocado , cut into a small dice

  10. Basil leaves

  11. salad leaves (tatsoi, endive and mizuna)

  12. raspberry vinegar

  13. Extra virgin olive oil

  1. Cut marron length ways in half Grind salt and spices together.

  2. Brush marron lightly with oil and season with spices.

  3. Bake in very hot oven on tray, flesh side up until just done (approx 8 mins).

  4. Whilst marron is baking prepare my favorite salad, using a mandolin with thin slicer attachment.

  5. Combine all salad ingredients in a large bowl with a little salt and serve.
