  5. Mix 8 c Flour

  6. 1 1/2 c Sugar

  7. 4 ts Salt

  8. 2 ts Allspice

  9. 2/3 c Instant nonfat milk

  10. Zest from 1 lemon

  11. For 1 loaf:

  12. 4 c Mix

  13. 2 pk Dry yeast

  14. 1 c Warm water

  15. 1/2 c Milk

  16. 1/3 c Soft butter

  17. 1/2 c Each currants and raisins

  18. More flour if necessary

  19. To make mix, combine all ingredients in plastic bag

  20. except lemon zest. Add zest and shake bag well. Seal

  21. and set aside until needed. To make 1 loaf: sprinkle

  22. yeast over warm water and let foam for 5 minutes.

  23. Place 2 cups of well shaken mix into a large bowl with

  24. the milk, butter and yeat mixture and beat with an

  25. electric mixer until well blended. Cover bowl and let

  26. mixture rise in a warm place for 30 minutes. Then

  27. place two more cups of mix onto the surface of dough

  28. in bowl. Beat until well blended again with mixer or by hand. Place a little flour on work surface and mix

  29. in the raisins and currants. Incorporate this into the

  30. dough and knead until smooth and elastic, adding

  31. additional flour to make a fairly stiff but pliable

  32. dough. Place dough in a large grerased bowl and turn

  33. to coat. Cover and let dough rise double in bulk,

  34. 1 to 2 hours. Punch down and knead into a round

  35. loaf. Place on baking sheet and allow to rise double

  36. 350 oven until done, about minutes. Makes 1 large loaf. --
