  1. 3/4 cup (175 ml) shortening 1 cup (250 ml) packed brown sugar 1/4 cup (50 ml)fancy molasses 1 tbs (5 ml) vanilla 2 cups (500ml) all-purpose flour 2 tsp (10ml) each baking soda & ground ginger 1 tsp (5ml) cinnamon 1/2 tsp (2ml) ground allspice or cloves 1/2 tsp (2ml) salt 1/4 cup (50ml) ganulated sugar 4 tbsp (50ml)chopped crystalized ginger

  1. In large bowl, beat shortening with brown sugar, until fluffy. Beat in egg, molasses and vanilla until smooth. In seperate bowl, whisk together flour, baking soda, ginger, crystalized ginger, cinnamon, all spice and salt; stir into molasses mixture in 2 additions 2. Scoop dough by level tablespoonfuls and roll into balls. Roll in granulated sugar to coat and place about 2 inches apart on parchment paper-lined or greased baking sheet.

  2. Bake in 350*F (180C) oven for about 12 minutes or until flattend, tops are cracked and bottoms are browned. Let cool on pans on racks.
