  1. 5 slices honey-cured bacon, or maple-smoked bacon

  2. 2 cups cottage cheese

  3. 3 tablespoons fresh chives, chopped

  4. 1 teaspoon Worcestershire sauce

  5. Salt, to taste

  6. Black pepper, to taste

  7. 1/4 cup almonds, toasted and finely chopped

  8. Whole wheat toast triangles for accompaniment

  1. In a large skillet, fry the bacon over moderate heat until crisp, drain on paper towels, and crumble.

  2. In a blender or food processor, combine the cottage cheese, chives, Worcestershire, and salt and pepper, blend until just smooth, and scrape into a bowl.

  3. Add the bacon and almonds, stir until well blended, cover, and chill about 30 minutes before serving on toast triangles.
