  5. 1 lg Granny Smith apple

  6. 3 md Carrots, peeled

  7. 3 Egg whites, lightly beaten

  8. 2 tb Canola oil

  9. 1/4 c Unsweetened applesauce

  10. 1/2 c Dark brown sugar

  11. 1 ts Vanilla

  12. 3/4 c Flour

  13. 1 1/2 ts Baking soda

  14. 1 1/2 ts Baking powder

  15. 1 ts Cinnamon

  16. 1/2 ts Nutmeg

  17. 1/4 ts Cloves

  18. 1/4 ts Salt

  19. 1/3 c Quick-cooking oatmeal

  20. 2/3 c Dark or golden raisins

  21. 1/2 c Grape Nuts cereal

  22. 1. Preheat oven to 350 degrees. Spray nine

  23. regular-sized muffin cups with vegetable cooking spray

  24. and set aside. 2. Cut the apple into quarters and remove the core. Coarsely grate the apple and carrots, either by hand or with a food processor.

  25. Combine with the lightly beaten egg whites, oil,

  26. applesauce, brown sugar and vanilla. 3. Sift together

  27. the flour, soda, baking powder, cinnamon, nutmeg,

  28. cloves and salt. Stir into the moist ingredients.

  29. Add the oatmeal, raisins and cereal. Spoon in the

  30. 4. Bake

  31. minutes, until the muffins test clean. Cool a few

  32. minutes in the pan before unmolding onto a cooling

  33. rack. --
