  2. 1 cup lukewarm water, about 110-115 degrees

  3. 1 tsp. honey

  4. 1 1/2 tsp. active dry yeast

  5. 2 1/2 cups all purpose flour

  6. 1/2 cup whole wheat flour

  7. 1 tsp. salt

  8. 2 tbsp. olive oil

  1. Combine 1/4 cup water and honey in a small bowl. Sprinkle yeast over and let stand 5 to 10 minutes until foamy. Combine both flours and salt in a food processor. Pulse to blend. With processor running, gradually add olive oil and yeast mixture. Add enough of remaining water to form a soft dough. If dough becomes sticky add some additional flour. Process dough 1 minute to knead. Lightly oil a large bowl. Transfer dough to prepared bowl and turn to coat. Cover bowl tightly with plastic wrap. Let stand in a warm place until dough is doubled, about 1 hour.
