  1. 2 C. all pourpose flour

  2. 1 Tbsp. baking powder

  3. 11/2 tsp. baking soda

  4. 3/4 tsp. salt

  5. 3/4 tsp.grated nutmeg

  6. 1/2 tsp. ground cloves

  7. 4 large eggs

  8. 11/4 c. packed light brown sugar

  9. 1 c. sugar

  10. 11/2 cup veg oil

  11. 1/4 cup heavy cream

  12. 1 TBS vanallia

  13. 1TBS crystsllized ginger

  14. 1 TBS. orange zest

  15. 3 Cups shredded carrots

  16. 1 cup rasians

  17. 8oz. crushed pineapple

  18. cream cheese frosting

  19. 1 lb. cream cheese softened ( room temperature)

  20. 1 stick (1/4 lb.) butter softened (room temp.)

  21. 1 tsp. grated orange zest

  22. 2 tsp. orange juice

  23. 1 tsp. vanilla extract

  24. 2 cups confectioners sugar ,then sifted

  25. 1 cup chopped walnuts

  1. Pan= 3 8x8= 38-40 minutes or 3 9x9 = 38-40 minutes or 1 9x13 = 40-50 minutes greese and flour pans then pre heat oven to 350degres F.

  2. In a bowl mix flour,baking powder,soda,salt,nutmeg, clove,and cinnamon. Set aside.

  3. In anouther bowl,beat eggsand suger on low;beat in oil, cream,vanilla,ginger , and orange zest.Mix in flour mixture;

  4. add carrots pineapple,nuts,and rasins.

  5. Pour batter into pans and bake until dark golden brown and a toothpick tests clean. Cool 20 minutes in the pan;

  6. turn out and cool completly.

  7. Cream Cheese Frosting Mix all ingredints together to smooth spreadable frosting.

  8. If frosting is too soft to spread on cake put in refregerate for 20-30 minutes.
