  1. 2 c. flour

  2. 1 teas. salt

  3. 1 egg

  4. 1/2 c. cold water Cheese Filling:

  5. 1 lb. Ricotta cheese

  6. 3 oz. pkg. cream cheese,softened

  7. 2 Tlb. granulated sugar

  8. 1/2 teas. salt

  9. 1 egg,beaten Sauerkraut Filling:

  1. For Dough: Mix flour and salt. Add egg and water. Mix together till smooth and satiny. Roll out 1/4 inch thick on floured board. Cut dough with coffee cup or cutter. Place prepared filling in center, fold dough over and seal edges with a fork. Cook in boiling water for 10 minutes. For Cheese Filling: Mix ingredients together till blended. Fill dough as directed above. Serve with sour cream and/ or sugar on top. For Sauerkraut Filling: Rinse sauerkraut well in cold water. Cook for 15 minutes with just enough water to cover. Set aside to cool slightly. Drain but do not rinse. Add butter, onion, salt and pepper. Fill dough as directed above. Serve with ketchup and /or sour cream.
