  1. 100g wholemeal breadcrumbs

  2. 120ml stout, something like Guinness

  3. 2 eggs

  4. 100ml sunflower oil

  5. 120g wholemeal flour

  6. 100g brown sugar

  7. 50g skinned almonds

  8. 4 level tsp mixed spice, or to taste

  9. 1/2tsp grated nutmeg

  10. 50g cooking apple, chopped

  11. 50g orange, chopped

  12. 200g raisins

  13. 300g sultanas

  14. lemon and orange zest

  15. 1tsp salt

  16. 1 large,

  17. 2 pint bowl

  1. Soak the breadcrumbs in the stout.

  2. Add the eggs, sunflower oil and sugar and mix together.

  3. Add everything else except the apple and orange and mix together for about 3-5 mins.

  4. Add in the apple and orange and blend together.

  5. Spoon the mixture into a large bowl, pressing down quite firmly. Cover with a layer of baking parchment with a pleat in it, held in place with an elastic band.

  6. Put the pudding in the top of a steamer, and steam for 2hrs, ensuring that the steamer does not boil dry. Remove from the steamer and leave the pudding to cool.
