  5. INGREDIENTS:

  6. 3 1/2 c Fresh orange juice, strained

  7. 1 1/2 c Good quality sauterne

  8. 1 ts Fresh lemon juice

  9. 3 1/4 c Sugar

  10. 1 Box powdered light fruit

  11. -pectin

  12. 6 Sprigs fresh tarragon,

  13. -optional

  14. Servings: makes 6 - 1/2 pint jars Notes: Sauterne may be replaced by

  15. other white wines in this sweet tart jelly. The flavor lends itself

  16. for use both as a spread on breads and as a meat glaze. It can also

  17. be reheated for use as a dessert sauce on ice cream, sliced oranges,

  18. or berries.

  19. DIRECTIONS: Place orange juice, sauterne, and lemon juice in heavy

  20. saucepan. Mix together 3/4 cup sugar and the powdered light fruit

  21. pectin. Add to wine mixture. Cook over high heat, stirring

  22. constantly, until mixture comes to a hard boil. Stir in remaining

  23. sugar. Bring to a rolling boil, stirring constantly. Boil for 1

  24. minute. Remove from heat and skim off foam with metal spoon.

  25. Immediately pour into hot sterilized jars, add optional sprigs of

  26. tarragon, if desired, and vacuum seal (hot water bath method, or can

  27. 6 weeks
