  1. 1 cup(s) bulgur

  2. Kosher salt

  3. Pepper

  4. 1/3 cup(s) non-fat Greek yogurt

  5. 1 teaspoon(s) orange zest

  6. 3 tablespoon(s) fresh orange juice

  7. 1/2 teaspoon(s) ground cumin

  8. 2 medium carrots , coarsely grated

  9. 1/2 cup(s) golden raisins

  10. 1/2 cup(s) roughly chopped fresh cilantro

  1. In a small saucepan, combine the bulgar with 2 cups water. Bring to a boil, add 1/2 teaspoon salt, then reduce heat and simmer covered until tender, 12 to 15 minutes. Drain any excess water and fluff with a fork.

  2. Meanwhile, in a large bowl, whisk together the yogurt, orange zest, juice, cumin, 1/2 teaspoon salt and 1/4 teaspoon pepper. Add the prepared bulgur and gently toss to coat. Fold in the carrots, raisins, and cilantro.
