  1. 1 lb. sweet or hot

  2. Italian sausage

  3. 30 large pasta shells

  4. 3 cups marinara sauce

  5. 2 cups ricotta or low-fat cottage cheese

  6. 1/2 cup fresh grated parmesan cheese

  7. 8 oz. shredded mozzarella cheese

  8. 1 Tbs basil

  9. 1 Tbs garlic

  10. 1 tsp oregano

  11. 1 small onion, chopped

  12. 1/2 small red pepper,

  13. julienne

  1. Preheat oven to 375 degrees.

  2. In large skillet, combineolive oil, garlic, basil, oregano, onion, and peppers. Cookover medium heat until onions are transparent.

  3. In separate skillet, cooksausage until firm. Remove and cut into bite-size slices.

  4. In medium bowl, combine herband vegetable mixture with sausage, blending gently. Fold incottage cheese, just until mixed.

  5. Boil shells in water untilal dente (firm, but not soft) - drain. Stuff shells withmixture, being sure not to overstuff.

  6. Place stuffed shells in alarge baking pan, cover with marinara sauce, sprinkle withmozzarella and parmesan cheese.

  7. Bake 45-50 minutes or untilbubbling.
