  2. PARMESAN CHEDDAR GRITS PUDDING

  6. 1/2 c Butter

  7. 5 c Milk -- divided, see eggs

  8. 1 c Cream

  9. 2 c Regular Grits -- or -long cooking grits

  10. 10 oz Spinach -- frozen, chopped

  11. -defrosted and squeezed dry

  12. 7 Green Onions -- chopped

  13. 3 Garlic Cloves -- chopped

  14. 2 c Cheddar Cheese -- grated

  15. 2 Eggs -- lightly beaten with

  16. -1/2 cup milk

  17. Salt and fresh black pepper

  18. -to taste

  19. --TOPPING--

  20. 1 c Parmesan Cheese -- grated

  21. Preheat the oven to 375F degrees. Butter a large casserole dish and set

  22. aside. Combine the butter, milk and the cream in a heavy saucepan and heat

  23. nearly to the boil. Stir i the grits and cook for 20-25 minutes, stirring

  24. as necessary to prevent scorching. A non-stick pan is handy for this task.

  25. Remove from the heat and stir in the spinach, green onions, and the grated

  26. cheddar cheese. Stir in the eggs whisked with the milk. Season to taste

  27. with salt and pepper. Pour into the prepared casserole dish and sprinkle

  28. with the parmesan cheese. Bake for 30 minutes or until the top is golden.
