  2. 3 teaspoons unsalted butter , softened

  3. 1 clove garlic, minced

  4. 3 tablespoons chopped fresh parsley leaves

  5. 1/2 cups fresh bread crumbs

  6. Table salt and ground black pepper

  7. Lamb

  8. 2 racks of lamb (about 1 1/2 pounds each), trimmed

  9. Coating

  10. 3 tablespoons Dijon mustard

  11. Sweet potato mash

  12. 2 tablespoon butter

  13. 1 lb sweet potato (pealed and cubed)

  14. 1 vanilla bean

  15. Swiss Chard

  16. 1 clove garlic

  17. 1 bunch swiss chard

  1. Seasoning Combine all the ingredients. You can just buy seasoned bread crumbs but it comes out much better this way.

  2. Lamb Preheat oven to 400. Season and sear the lamb. You can do this an hour before if you have company and you put on a cooling tray. Spread mustard in the meat and then press the seasoning on the lamb. Cook until done. It should take about 7-10 minutes in the oven. If the season starts to brown too much, put aluminum foil over it.

  3. Sweet potatoes Cook the sweet potatoes until tender. Drain. Add a dash of salt and pepper, scrape the vanilla bean into it and butter cube. Use a hand mixer to blend it.

  4. Swiss Chard Light sweat the garlic. Don’t burn. Add the swiss chard and salt and pepper. When it is wilted. Adjust seasoning.
