  1. 300 ml semi skimmed milk

  2. 3 eggs

  3. 1/4 tsp nutmeg

  4. 1 pinches bicarbonate of soda plain flour , to bind vegetable oil

  1. Method 1. Preheat the oven to 180C/gas 4. Brush the insides of a pudding mould with vegetable oil and place into the oven to warm for 3-4 minutes.

  2. Whisk together the milk, eggs, nutmeg and bicarbonate of soda. Sieve in enough plain flour, mixing until the batter has the consistency of double cream.

  3. Pour the batter into the greased moulds and bake for 7-8 minutes, or until golden. Turn the oven off and leave the puddings to cook in the residual heat for 5-6 minutes, or until well-risen and golden.
