  1. 1 cup long-grain rice

  2. 3/4 cup chopped onion

  3. 1/2 cup chopped celery

  4. 1/2 cup chopped green sweet pepper

  5. 2 cloves garlic, minced

  6. 1/4 cup margarine or butter

  7. 1/2 cup chopped tasso or smoked sausage

  8. 1 teaspoon Creole or Cajun seasoning or Three-Pepper Seasoning (recipe follows)

  9. 4 skinless, boneless chicken breast halves (1 pound)

  10. 1/4 teaspoon bottled hot pepper sauce

  11. 1/2 of a 6-ounce can tomato paste

  12. 1 16-ounce can tomatoes, cut up
