  1. 2 cups 474ml Low-sodium chicken broth

  2. 2 cups 474ml Water

  3. 1/2 cup 118ml White wine

  4. 2 Golden Delicious apples - peeled, chopped

  5. 1 cup 110g / 3.9oz Thinly-sliced carrots

  6. 1 cup 62g / 2 1/5oz Onion - thinly sliced (small)

  7. 1/2 cup 73g / 2.6oz Chopped fresh fennel

  8. 1 Bay leaf

  9. 1/4 teaspoon 1 1/3ml Dried thyme leaves

  10. 6 Peppercorns Low-fat plain yogurt -

  1. Recipe Instructions In large pot, combine all ingredients, except yogurt, and bring to boil. Reduce heat and simmer, covered, for 20 minutes. Strain soup, reserving liquid. Remove bay leaf from apple vegetable mixture. In blender or food processor, puree mixture; add reserved liquid and blend well. Reheat soup, if necessary, ladle into soup bowls and serve with a dollop of yogurt, if desired.
