  8. 3 tablespoons lowfat mayonnaise

  9. 1 teaspoon dijon mustard

  10. 1/2 teaspoon turmeric

  11. 1/2 teaspoon curry powder

  12. 8 ounces firm tofu -- lowfat, well drained

  13. 1/2 cup shredded carrots

  14. 1 tablespoon onion -- finely minced

  15. salt and pepper -- to taste

  16. 2 large whole-wheat pita breads -- cut in half

  17. In a bowl, combine mayo, mustard, turmeric and curry powder. Gently

  18. stir in tofu, carrots and onion. Add salt and pepper to taste and toss

  19. to combine. Chill.

  20. Spoon into pita pockets and serve. - - - - - - - - - - - - - - - - - -

  21. Serving Ideas : Serve with a fresh fruit salad and a small green salad.
