  1. 2 tbsp olive oil

  2. 1 large onion , diced

  3. 1 pkg frozen chopped spinach , thawed and drained

  4. 1/4 to 1/2 tsp nutmeg

  5. 12 egg s, beaten

  6. 6 cups of shredded Mozzarella

  7. 1 cup grated Parmesan

  8. 1/2 tsp salt

  9. 1/4 tsp ground black pepper

  1. Preheat oven to 350 degrees. Spray 2 12-cup muffin tins with vegetable oil spray. Over medium-high heat, heat oil in a skillet until shimmering. Add onions and cook, stirring occasionally until they are soft and almost translucent. Add the drained spinach and the nutmeg and cook until excess moisture has evaporated. Set aside to cool. In a large bowl, combine eggs, salt, pepper, and cheeses and stir to combine (it will be pretty thick). Add spinach mixture and scoop into the prepared muffin tins. Bake in preheated oven until golden brown and the centers have set (about 20 minutes). Let cool for 10 minutes before turning out onto a cooling rack or serving platter. Serve immediately, or let cool completely and refrigerate. Can be enjoyed either warm or cold.
