  1. Smothered Venison

  2. 4 lbs venison (1-inch cubes)

  3. 1 cup butter

  4. 4 cups chopped onions

  5. 2 cups chopped bell pepper

  6. 1/4 cup chopped garlic

  7. 2 bottles beer

  8. 1 tablespoon cayenne pepper

  9. 1 tablespoon black pepper

  10. 1 box beef or mushroom soup mix (both packets)

  11. 1 cup water

  12. 1 cup flour

  13. 2 cups sliced mushrooms

  14. Mix flour with cayenne, black pepper and toss venison to coat. Pour

  15. whole mixture into melted butter to brown. Immediately add onion,

  16. pepper and garlic and toss to mix. Add soup mix, beer and water.

  17. Stir to mix and add mushrooms and bake at 350 degrees, covered, for two hours or cook in a crock pot until the meat is tender. Serve

  18. over steamed rice or mashed potatoes.
