  1. Soak rice in hot water for 4 hours and grind at high speed for 3 minutes.

  2. Soak urad dal (black gram - split) in cold water for 4 hours in cold water and grind at high speed for 3 minutes.

  3. Mix the two above and allow to ferment overnight with salt.

  4. The next morning, mix batter well.

  5. Heat 2 tbsp oil and fry mustard seeds, chopped green chilies, asafetida and cashew nuts. Remove from fire and add ghee. Pour this over the batter and mix thoroughly.

  6. Pour into the idli molds and steam cook for 7 to 10 minutes. Serve with chutney.
