  5. 1 1/2 c Chickpeas; cooked

  6. 1 1/2 c Pinto beans; cooked

  7. 2 c Pumpkin; cubed

  8. 2 md Chayote squash; cut into 2 -pieces

  9. 2 c Celery root; chopped

  10. 2 c Yucca; peeled and cubed

  11. 2 c Battata; peeled and cubed

  12. 8 Plum tomatoes; quartered

  13. -lengthwise

  14. 3 tb Ground cumin

  15. 16 Whole garlic cloves

  16. 4 lg Yellow onions; coarsely

  17. -chopped

  18. 1 tb Black pepper

  19. 1 ts Hot pepper sauce

  20. 1/4 c Olive oil

  21. 1/4 ts Salt

  22. 1/2 c Fresh cilantro; chopped

  23. Preheat oven to 300 deg.

  24. Combine all ingredients in a large roasting pan or casserole dish.

  25. Place in oven and cook, uncovered, for 4 hours. The pumpkin, chayote

  26. and tomatoes will cook down to a thick sauce. Stir every 30 minutes.

  27. Add more stock if necessary. Serve hot.
