  6. 1/2 lb light red kidney beans

  7. 1/2 c yellow onions, -- diced

  8. 1/4 c green onions, -- sliced

  9. 1/4 c red onions, -- diced

  10. 1 c celery, -- chopped

  11. 1 jalapeno pepper, -- seeded

  12. : and diced

  13. 1 bay leaf

  14. 1 pn white pepper

  15. 1 ts Paul Prudhomme's Pork Magic

  16. 3/4 ts dried oregano

  17. 3/4 ts dried basil

  18. 1 grind fresh black pepper

  19. 1 pn crushed red pepper

  20. 1 TB roasted garlic

  21. 1 lb Andouille sausage, -- sliced

  22. : and sauteed

  23. 1/4 c Tasso ham, -- diced and : sauteed

  24. 1/4 c pickled pork, boiled with

  25. : seafood boil -- and : shredded

  26. 1 TB file powder

  27. Cover the beans with cold water and soak them

  28. overnight. Drain them. In a 4 quart pot add all the

  29. vegetables and spices and cook over low heat until

  30. 10 to 15 minutes. Then add the

  31. beans and meat, cover with water and cook over high

  32. 1 hour. Turn the heat down and simmer for more minutes. Stir in file powder and cook 2 more

  33. minutes to thicken.
