  1. 1 Cup warm water

  2. 1 pkg. active dry yeast

  3. 1/4 teaspoon sugar

  4. 2 Tablespoons olive oil

  5. 3 Cups bread flour

  6. 1 Tablespoon sugar

  7. 2 teaspoons salt

  1. Coat a large bowl and a small baking sheet with nonstick spray. Proof water, yeast and ¼ teaspoon sugar in a small bowl. Let stand for 15 minutes, then stir in oil. Blend flour, 1 Tablespoon sugar and salt together. Slowly add yeast mixture and process until a ball forms around the blade (no longer than 30 seconds). Gently knead on a well-floured surface until smooth (about 10 times), then form into a ball. Place dough in prepared bowl, cover with plastic wrap and let rise 1 hour. Punch dough down and shape into 4 balls for calzones. Freeze, or if making immediately, place on prepared baking sheet, cover and let rise again for 30-40 minutes before rolling.
