  1. 1/2 c All-purpose flour; sifted

  2. 1/2 ts Salt

  3. 2/3 c Granulated sugar

  4. 1 c Fat; room temp

  5. 2 Eggs

  6. 1/2 ts Vanilla extract

  7. 1 ts Orange rind; grated

  8. 1 c Rolled oats

  9. 1/2 c Shredded coconut meat; moist

  10. 350 to 375 degrees; grease cookie sheets. Sift the flour, salt and sugar into a mixing bowl. Add the fat, eggs, vanilla extract and orange rind; blend thoroughly. Fold in the oats and coconut. Drop from a teaspoon

  11. 2 inches apart onto the cookie sheets. Flatten with a knife which has been dipped in cold water. Bake for 10 to 12 minutes. Remove from cookie sheets immediately. Penny Halsey (ATBN65B). --
