  2. 3 to 5 pound fresh or frozen, thawed turkey breast

  3. 1 tbsp. vegetable oil

  4. 14 1/2 ounce can chicken broth

  5. 1/2 cup chopped onion

  6. 1/2 cup chopped celery

  7. 4 tbsp. butter

  8. 4 cups packaged cornbread stuffing mix

  9. 16 ounce can sliced peaches, drained and chopped

  10. 1/2 cup chopped pecans

  1. Preheat oven to 325 degrees. Place the turkey breast in a small roasting pan and brush all over with oil. Combine broth, onion, celery and butter in a large saucepan and bring to a boil over medium heat. Reduce heat to low and simmer 5 minutes. Ass the cornbread stuffing, peaches and pecans and toss to blend. Spoon the stuffing mixture around the turkey. Bake turkey about 1 hour 45 minutes until the temperature reaches 170 degrees. Transfer the turkey to a platter and tent with foil. Let turkey stand 10 minutes before slicing and serving with stuffing.
